
Cajun-Style Ribs
(Serves 2 to 4)
- Cajun-Style Ribs
- 1/4 cup coarse salt
- 1/3 cup brown sugar
- 2 tbsp ground pepper
- 1 tbsp grated lemon rind
- 1 tbsp Tabasco sauce
- 2 tbsp paprika
- 5 lb beef ribs
- Sauce
- 1 cup chicken or beef broth
- 1/3 cup Worcestershire sauce
- 1/2 cup vinegar
- 1/4 cup corn oil
- 1 tbsp mustard
- 1 tbsp chili powder
- 1 tbsp pepper
- 1 tsp cayenne pepper
- 1 tbsp white pepper
- 1 tbsp Tabasco sauce
- 1 garlic clove, crushed
- Directions:
- Make a paste from the salt, brown sugar, pepper, lemon rind, Tabasco sauce, and paprika.
- Rub paste into ribs and marinate in refrigerator overnight.
- Place ribs on mesquite grill, being careful not to burn ribs by turning occasionally.
- Ribs cook in about 45 min to 1 hour.
- For sauce, mix all of the ingredients into a small saucepan and slowly bring to a boil.
- Baste the ribs about every 25 minutes.
- Baste ribs lightly just before serving.
