
Beef Indonesian-Style
- Ingredients:
- 1/2 tsp. turmeric powder
- 2 cloves garlic
- 15 red chili peppers
- 2 tbsp. canola OR vegetable oil
- 2 lb. beef flank or boneless sirloin
- 1 small onion sliced
- 4 cups coconut milk
- 2 tsp. fresh ginger, grated
- 1 tbsp. lime zest
- 2 bay leaves
- salt and pepper to taste
- Directions:
- In a food processor, combine turmeric, garlic & chili peppers.
- Using a wok, heat oil & add spice mixture, cooking a few minutes until fragrant.
- Cut beef into slices, add to wok, stir-frying for 3-4 minutes.
- Add onions, coconut milk, ginger, lime zest, and bay leaves.
- Simmer about 1 hour, stirring frequently.
- Sauce will thicken.
- Add salt & pepper.
- Serve over Thai Jasmine rice.
- Serves 6.
