Irish Soda Bread

Ingredients:
4 cups all-purpose flour
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1/2 cup sugar
2 tbsp. caraway seeds
2 lg eggs lightly beaten
1 1/4 cups buttermilk
1 cup sour cream
3 cups currants and enough orange juice to soak them in
Directions:
Soak currants in a bowl with the orange juice (approx 1/2 hr is sufficient).
Grease a 9" round baking pan or a 9" cast iron skillet.
In a large bowl, combine flour (reserving 1 tbsp.), sugar, baking powder & soda, salt, caraway seeds & currants.
In a small bowl, blend eggs, buttermilk & sour cream.
Stir liquid into dry ingredients just until flour is moistened.
Knead dough in the bowl 10 or 12 strokes.
Dough will be sticky.
Then place it in the prepared pan skillet and pat down.
Make a 3" long.
3/4" deep slit in the top of the dough.
Dust with the reserved 1 tbsp flour.
Bake in a preheated 350oF oven for 55 to 65 minutes.
Cool & turn out onto a rack.
