
Irish Soda Bread
- Ingredients:
- 4 cups all-purpose flour
- 2 tsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup sugar
- 2 tbsp. caraway seeds
- 2 lg eggs lightly beaten
- 1 1/4 cups buttermilk
- 1 cup sour cream
- 3 cups currants and enough orange juice to soak them in
- Directions:
- Soak currants in a bowl with the orange juice (approx 1/2 hr is sufficient).
- Grease a 9" round baking pan or a 9" cast iron skillet.
- In a large bowl, combine flour (reserving 1 tbsp.), sugar, baking powder & soda, salt, caraway seeds & currants.
- In a small bowl, blend eggs, buttermilk & sour cream.
- Stir liquid into dry ingredients just until flour is moistened.
- Knead dough in the bowl 10 or 12 strokes.
- Dough will be sticky.
- Then place it in the prepared pan skillet and pat down.
- Make a 3" long.
- 3/4" deep slit in the top of the dough.
- Dust with the reserved 1 tbsp flour.
- Bake in a preheated 350oF oven for 55 to 65 minutes.
- Cool & turn out onto a rack.
