Caribbean Crab-Clams

Ingredients:
5 tbsp. butter
1 garlic clove, minced
5 green onions, chopped
1 chili pepper, chopped
1 tbsp. curry powder
1 lb. shredded crab meat
2 tsp. coriander leaves, chopped
1 tbsp. Italian parsley, chopped
bottled clam juice
2 cups bread crumbs
salt & pepper to taste
12 clean clam shells
Directions:
Melt butter in a large skillet.
Add garlic, green onions & chili pepper.
Sauté until fragrant & soft.
Stir in curry powder, followed by crab meat, coriander leaves & parsley.
Add clam juice, bread crumbs, salt & pepper.
Stuff into clamshells and bake at 375 ºF for 25 min. or until browned.
Serves 6.
