
Caribbean Crab-Clams
- Ingredients:
- 5 tbsp. butter
- 1 garlic clove, minced
- 5 green onions, chopped
- 1 chili pepper, chopped
- 1 tbsp. curry powder
- 1 lb. shredded crab meat
- 2 tsp. coriander leaves, chopped
- 1 tbsp. Italian parsley, chopped
- bottled clam juice
- 2 cups bread crumbs
- salt & pepper to taste
- 12 clean clam shells
- Directions:
- Melt butter in a large skillet.
- Add garlic, green onions & chili pepper.
- Sauté until fragrant & soft.
- Stir in curry powder, followed by crab meat, coriander leaves & parsley.
- Add clam juice, bread crumbs, salt & pepper.
- Stuff into clamshells and bake at 375 ºF for 25 min. or until browned.
- Serves 6.
