
Blackened Sole
- Ingredients:
- 4 sole fillets
- Cooking oil spray
- 2 tbsp. olive oil
- Cajun spice mix
- Italian parsley, chopped
- 1 lemon cut in quarters
- Directions:
- Coat both sides of fish fillets with cooking spray.
- Sprinkle with Cajun spices according to personal taste.
- Heat oil in cast iron pan.
- Add fish, but please use caution! Fish will cook very quickly, producing considerable smoke.
- As soon as fish begins to char, flip to other side.
- Place on plates, topping with parsley & lemon slices.
- Serves 4.
