
Shrimp Diablo
- Ingredients:
- 2 jalapeno peppers, seeds removed
- 2 red chili peppers, seeds removed
- 3 large tomatoes
- 1 cup fresh cilantro
- 5 cloves of garlic
- 4 tbsp. olive oil
- 1 onion, chopped
- 3 lb. shrimp, peeled & deveined
- 1/2 cup white wine
- salt & pepper to taste
- 1 lemon thinly sliced
- Directions:
- In a food processor combine jalapeno peppers, chili peppers, tomatoes, cilantro & garlic.
- Heat olive oil in a skillet.
- Sauté onions until soft.
- Add shrimp, sautéing until pink.
- Add spice mixture, white wine & salt & pepper.
- Simmer until hot and bubbly.
- Serve over rice & garnish with lemon slices.
