Golden Gravy
(Makes about 2 cups)
As a kid, I loved my mom's gravy on dressing, and many other dishes. Here, I've updated Mama's gravy recipe to fit into my current lifestyle, while at the same time maintaining it's flavor. This gravy is particularly good over my dressing and cooked vegetable dishes; it adds an extra dimension of flavor to them.
- Ingredients:
- medium onion, finely diced
- 3 tablespoons olive oil
- 1/2 stick (2 ounces) butter
- 3 tablespoons all-purpose flour
- 1 cup vegetable stock
- Salt
- Black Pepper, freshly ground
- Directions:
- In a skillet, saute the onion in the olive oil until it is brown.
- Add the butter and lower the heat.
- As the butter melts, add the flour, stirring constantly to keep it from burning.
- After the flour browns, add the stock and stir until gravy thickens.
- Season with salt and pepper to your taste.
