Lamb Curry Masala

Ingredients:
4 lb. lean boneless lamb
3/4 cup canola oil
3 medium onions, diced
2 cloves garlic, pureed
2 tsp. mustard seed
2 tsp. garam masala
1/4 tsp. dried crushed chili pepper
2 tsp. cumin powder
1 1/4 tsp. cardamon
1 tsp. turmeric
2 qt. chicken broth
salt and pepper to taste
Directions:
Cut meat into medium-size cubes.
Heat oil in a Dutch oven or skillet.
Add meat & cook until golden brown.
Remove meat and set aside.
Add onions, cooking until soft.
Reduce heat to medium & add garlic, mustard seeds, garam masala, chili pepper, cumin, cardamon & turmeric, cooking approx. 3 min.
Add browned meat & chicken broth, & cook for approx.
1 1/2 hours or until lamb is tender.
Salt & pepper to taste.
Serve over Basmati rice.
