
Lamb Curry Masala
- Ingredients:
- 4 lb. lean boneless lamb
- 3/4 cup canola oil
- 3 medium onions, diced
- 2 cloves garlic, pureed
- 2 tsp. mustard seed
- 2 tsp. garam masala
- 1/4 tsp. dried crushed chili pepper
- 2 tsp. cumin powder
- 1 1/4 tsp. cardamon
- 1 tsp. turmeric
- 2 qt. chicken broth
- salt and pepper to taste
- Directions:
- Cut meat into medium-size cubes.
- Heat oil in a Dutch oven or skillet.
- Add meat & cook until golden brown.
- Remove meat and set aside.
- Add onions, cooking until soft.
- Reduce heat to medium & add garlic, mustard seeds, garam masala, chili pepper, cumin, cardamon & turmeric, cooking approx. 3 min.
- Add browned meat & chicken broth, & cook for approx.
- 1 1/2 hours or until lamb is tender.
- Salt & pepper to taste.
- Serve over Basmati rice.
- Serves 6.
