Oven-Roasted Pork Tenderloin with Spicy Citrus Glaze

(Serves 6)

Ingredients:
2 lean pork tenderloins, (12 oz. each)
1 tbsp. crushed dried oregano
1 cup finely minced onion
1 large clove garlic, finely minced
grated zest and juice of 1 lime
grated zest and juice of 1 lemon
grated zest and juice of 1 small orange
2 tbsp. packed light brown sugar
1 tsp. freshly ground pepper
Directions:
Remove pork tenderloins and place in a large oven roasting bag.
In a medium bowl, combine oregano, onion, garlic, citrus juices and zests, brown sugar, and pepper.
Mix well and then pour over pork tenderloins.
Seal roasting bag according to manufacturer's directions.
Place the roasting bag in a shallow baking dish and roast in a preheated 375 ºF oven for 35 to 40 minutes.
Transfer tenderloins from roasting bag to a carving board and let stand for 5 minutes, reserving the herbed citrus mixture.
Meanwhile, transfer citrus mixture to a small saucepan and bring to a rapid boil.
Boil for 2 to 3 minutes to reduce slightly and form a glaze.
When ready to serve, slice the tenderloins on a diagonal and dab with some of the citrus glaze.
