
Oven-Roasted Pork Tenderloin with Spicy Citrus Glaze
(Serves 6)
- Ingredients:
- 2 lean pork tenderloins, (12 oz. each)
- 1 tbsp. crushed dried oregano
- 1 cup finely minced onion
- 1 large clove garlic, finely minced
- grated zest and juice of 1 lime
- grated zest and juice of 1 lemon
- grated zest and juice of 1 small orange
- 2 tbsp. packed light brown sugar
- 1 tsp. freshly ground pepper
- Directions:
- Remove pork tenderloins and place in a large oven roasting bag.
- In a medium bowl, combine oregano, onion, garlic, citrus juices and zests, brown sugar, and pepper.
- Mix well and then pour over pork tenderloins.
- Seal roasting bag according to manufacturer's directions.
- Place the roasting bag in a shallow baking dish and roast in a preheated 375 ºF oven for 35 to 40 minutes.
- Transfer tenderloins from roasting bag to a carving board and let stand for 5 minutes, reserving the herbed citrus mixture.
- Meanwhile, transfer citrus mixture to a small saucepan and bring to a rapid boil.
- Boil for 2 to 3 minutes to reduce slightly and form a glaze.
- When ready to serve, slice the tenderloins on a diagonal and dab with some of the citrus glaze.
