Traditional Green Curry Chicken

Ingredients:
2 tbsp. green curry paste
2 cans coconut milk
1 can chicken stock
1/2 lb. boneless chicken breast
2 tsp. white sugar
2 tbsp. fish sauce
1/4 cup canola oil
2 cups. fresh or frozen peas
3-4 kaffir lime leaves OR 2 tbsp. lime zest
15-20 Thai basil leaves
Directions:
In a large frying pan, heat green curry paste.
Add coconut milk & simmer for a few minutes.
Add chicken stock. Slice chicken into medium-size strips or chunks and add to mix.
Bring to a boil, then reduce to simmer for about 8 to 10 min. or until chicken is cooked.
Add sugar, fish sauce, canola oil, peas & kaffir leaves or lime zest.
When peas are cooked, add basil. Serve over Thai Jasmine rice. Serves 6.
