
Traditional Green Curry Chicken
- Ingredients:
- 2 tbsp. green curry paste
- 2 cans coconut milk
- 1 can chicken stock
- 1/2 lb. boneless chicken breast
- 2 tsp. white sugar
- 2 tbsp. fish sauce
- 1/4 cup canola oil
- 2 cups. fresh or frozen peas
- 3-4 kaffir lime leaves OR 2 tbsp. lime zest
- 15-20 Thai basil leaves
- Directions:
- In a large frying pan, heat green curry paste.
- Add coconut milk & simmer for a few minutes.
- Add chicken stock. Slice chicken into medium-size strips or chunks and add to mix.
- Bring to a boil, then reduce to simmer for about 8 to 10 min. or until chicken is cooked.
- Add sugar, fish sauce, canola oil, peas & kaffir leaves or lime zest.
- When peas are cooked, add basil. Serve over Thai Jasmine rice. Serves 6.
