Chicken Casablanca

Ingredients:
2 cups chicken breast, cooked, skinned & diced
2 tbsp. olive oil
1 onion, chopped
2 cloves garlic, minced
1 celery, chopped
1 red bell pepper, chopped
1 can whole tomatoes
1 c. long grain rice
1/2 tsp. dried thyme
1/2 tsp. dried basil
1 1/2 tsp. Cajun spices
1/2 tsp. black pepper
2 cups chicken broth
1 tsp. Tabasco
2 bay leaves
Directions:
Heat oil in a large skillet.
Sauté onion, garlic, celery & red pepper until soft.
Add canned tomatoes with their liquid, rice, thyme, basil, Cajun spices, pepper, chicken broth, Tabasco & bay leaves.
Bring to a boil, reduce heat & simmer until rice is tender.
Add chicken & heat.
Serves 4.
