
Chicken Casablanca
- Ingredients:
- 2 cups chicken breast, cooked, skinned & diced
- 2 tbsp. olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 celery, chopped
- 1 red bell pepper, chopped
- 1 can whole tomatoes
- 1 c. long grain rice
- 1/2 tsp. dried thyme
- 1/2 tsp. dried basil
- 1 1/2 tsp. Cajun spices
- 1/2 tsp. black pepper
- 2 cups chicken broth
- 1 tsp. Tabasco
- 2 bay leaves
- Directions:
- Heat oil in a large skillet.
- Sauté onion, garlic, celery & red pepper until soft.
- Add canned tomatoes with their liquid, rice, thyme, basil, Cajun spices, pepper, chicken broth, Tabasco & bay leaves.
- Bring to a boil, reduce heat & simmer until rice is tender.
- Add chicken & heat.
- Serves 4.
