
Hot Italian Chicken Sausage
- Ingredients:
- 1 1/2 lb. ground chicken or turkey
- 1/2 tsp. salt
- 1 tsp. garlic powder
- 1/2 tsp. freshly ground black pepper
- 2 tsp. paprika
- 1 tbsp. canola oil
- 1/4 tsp. anise seed
- 1/4 tsp. fennel seed
- 1/4 tsp. cayenne pepper
- sausage casings (optional)
- Directions:
- Combine ground chicken (or turkey), salt, garlic powder, black pepper & paprika in a bowl.
- In a processor, combine oil, anise seed, fennel seed & cayenne pepper and blend until as smooth as possible.
- Add spice mixture to chicken & mix well.
- Cover & refrigerate 24 hours.
- Stuff sausage into casings or fry up as patties.
- Tasty either way!
- Serves 6-8.
