Hot Italian Chicken Sausage

Ingredients:
1 1/2 lb. ground chicken or turkey
1/2 tsp. salt
1 tsp. garlic powder
1/2 tsp. freshly ground black pepper
2 tsp. paprika
1 tbsp. canola oil
1/4 tsp. anise seed
1/4 tsp. fennel seed
1/4 tsp. cayenne pepper
sausage casings (optional)
Directions:
Combine ground chicken (or turkey), salt, garlic powder, black pepper & paprika in a bowl.
In a processor, combine oil, anise seed, fennel seed & cayenne pepper and blend until as smooth as possible.
Add spice mixture to chicken & mix well.
Cover & refrigerate 24 hours.
Stuff sausage into casings or fry up as patties.
Tasty either way!
Serves 6-8.
