
Easy Tomato Soup
- Ingredients:
- 1 chopped onion
- 1 tbsp. vegetable oil
- 1 ½ lbs tomatoes, roughly chopped
- 2 cups chicken stock
- Water as needed
- Salt and pepper
- Optional:
- Canned corn kernels
- Cooked tiny pasta shells or rice
- Parmesan cheese
- Chopped cooked spicy sausage
- Pureed roasted red or yellow peppers
- Other finely chopped vegetables like broccoli, carrots, celery, etc.
- Directions:
- Cover the bottom of a large soup pot with oil.
- Sauté the onions until soft.
- Add tomatoes, stock, salt and pepper and other spices.
- Simmer over medium-low heat, with the cover on, for 30-35 minutes.
- Pour soup through a sieve to remove seeds and skin; rinse out pot.
- Pour soup back into pot and reheat over low heat (don’t return to a boil).
- Add in any optional ingredients.
- Variations:
- Some like it hot: Add a pinch of cayenne pepper, or hot sauce (start with one teaspoon, to taste, but keep in mind the spices will get stronger over time) to the tomatoes and stock.
