
Turkish Eggplant
- Ingredients:
- 3 small eggplants
- Salt
- 1 tbsp (15 ml) olive oil
- 1 onion, minced
- 2 cloves minced garlic
- 1 chopped green pepper
- 1 lb (500 gr) chopped tomatoes
- 2 tsp. (10 ml) tomato paste
- 1 tsp. (5 ml) cinnamon
- 1 tsp. (5 ml) paprika
- Salt and pepper to taste
- Directions:
- Slice the eggplants in half lengthwise and salt.
- Let stand for 30 minutes.
- Rinse and dry by gently dabbing with a paper towel.
- Spray a cookie sheet with cooking spray.
- Place the eggplant slices on the sheet and grill 3 minutes on each side or until tender.
- Heat oil in a large frying pan.
- Add onion, garlic and green pepper and brown.
- Add the tomatoes, tomato paste, cinnamon, paprika, salt and pepper.
- Simmer 10 minutes.
- Place the eggplant in a baking dish and cover each slice with the vegetable mixture.
- Bake for 20 minutes at 400 oF (200 oC).
