Turkish Eggplant

Ingredients:
3 small eggplants
Salt
1 tbsp (15 ml) olive oil
1 onion, minced
2 cloves minced garlic
1 chopped green pepper
1 lb (500 gr) chopped tomatoes
2 tsp. (10 ml) tomato paste
1 tsp. (5 ml) cinnamon
1 tsp. (5 ml) paprika
Salt and pepper to taste
Directions:
Slice the eggplants in half lengthwise and salt.
Let stand for 30 minutes.
Rinse and dry by gently dabbing with a paper towel.
Spray a cookie sheet with cooking spray.
Place the eggplant slices on the sheet and grill 3 minutes on each side or until tender.
Heat oil in a large frying pan.
Add onion, garlic and green pepper and brown.
Add the tomatoes, tomato paste, cinnamon, paprika, salt and pepper.
Simmer 10 minutes.
Place the eggplant in a baking dish and cover each slice with the vegetable mixture.
Bake for 20 minutes at 400 oF (200 oC).
