Stewed Okra and Tomatoes
(Serves 3 to 4)
When I prepare this dish, it takes me back to the days of being in the garden with Grandad. The flavor of the onion, tomato and okra blend so well together. It's a wonderful side dish and great over corn bread or as a sauce on pizza.
- Ingredients:
- 2 cups okra, cut into 1/2-inch pieces
- 2 large tomatoes, peeled and diced
- 1 medium onion, diced
- 4 tablespoons water
- 2 tablespoons sugar
- Directions:
- Put all the ingredients into a medium pot, cover, and bring to a boil.
- Lower the heat and simmer, covered, for about one hour.
- This is great over corn bread, with cooked cabbage, beans, greens, in soups and even on pizza.
