Frijoles Refritos (Refried Beans)

Ingredients:
2-15 oz cans black beans
1 tbsp. olive oil
1 onion, chopped
2 cloves garlic, minced
1/2 cup jalapeno peppers, seeds removed, chopped
salt and pepper, to taste
cilantro
Directions:
Mash black beans with their liquid.
Heat oil in a skillet.
Sauté onion & garlic until soft.
Add jalapeno peppers & sauté 5 min.
Add to mashed beans mixing well.
Add salt & pepper to taste.
Serve hot.
Garnish with cilantro.
Great as a side dish, as a stuffing for tacos or burritos, or as a dip with tortilla chips. Olé!
